14 Day Pickles 

My Fall garden is coming to an end. We’ve had such nice weather here in Missouri that we’ve been enjoying lettuce, spinach, jalapeños and cucumbers.


I picked the last of the cucumbers this morning.  The overnight temps are getting cool enough that they are starting to wilt and die.

I’ve been wanting to make pickles and have just enough to make a batch.


I’m using my husband’s grandmother’s recipe for 14 day pickles.  Days 1-7 they just soak in a salt brine.


You bring a gallon of water and 2 cups of pickling salt to a boil and then pour it over the cucumbers. They need to be submerged though. I used my canning rack and a plate to get them all under and then a jar of salsa to weight it down.
