Using up leftovers – Ham & Cheese Pockets

My focus right now is how can I cut that grocery bill and save money.  One way to do that is use up all leftovers.  Years ago we wouldn’t eat any leftovers, now we look forward to them.  I plan out suppers so that we have enough for our lunches the next day or two.

For Easter I cooked up the traditional ham dinner.  It was just the three of us so we had quite a bit leftover.  We took ham sandwiches most of the following week.  We still had some left so I decided to make homemade Hot Pockets.  These turned out really good!  My daughter has taken some for her lunches and we had them over the weekend for lunch.

I just used a pizza dough recipe and divided it into 8 balls.  Then I rolled them out and filled them with the last of the ham and some swiss cheese.  Brush them with an egg wash and bake them for about 15 minutes.  You can eat them right them or cool them and freeze them for later.  That is what we did.  To reheat you can pop them in the microwave or bake for 10 minutes at 325.

Roll the dough out.


Fill it with whatever you like.  I used swiss cheese and leftover spiral cut ham.  (I should have used more cheese).


Fold the dough over and crimp the edges with a fork.  Put some vent slices in the top.


Put them on parchment paper and brush them with an egg wash.  Put them in the oven to bake.


Eat them now or let them cool to freeze later.



There you have it, one more way to stretch the grocery budget and use up all your leftovers.
