White Bean, Cucumber & Tomato Salad

During the summer months we try to eat lighter and use the grill more.  This past weekend was hot and MUGGGGGGY!  Sunday was miserable.  There was barely a breeze and it was thick!  We kept lunch very light with this salad.

I first saw this recipe on our local public television station on one of the cooking shows they have.  I couldn’t find that recipe, but I did find one similar that Martha Stewart has.  It was mostly the dressing that I was looking for.  Martha’s was very simple.  It was just olive oil and lemon juice.


Here’s the cast of characters:  Olive oil, white beans, tomato, cucumber and lemon juice (plus salt and pepper to taste).

Drain and rinse the beans and put them in a bowl.


Cut up the cucumber and tomato and place them in the bowl.  I peeled my cucumber, but you can leave it on if you prefer.



Add 2 tablespoons of olive oil and 1 tablespoon of fresh lemon juice.  Salt & pepper to taste.  We’re cutting back on sodium intake so I didn’t add any.

This meal was good, but we think it could get better.  The best improvement will be when I can make it with cucumbers and tomatoes fresh from the garden.  I think some fresh parsley and basil would add some nice flavor as well.
