I can’t believe it’s been 3 weeks since my last blog! Where has the time gone? Oh, that’s right- it’s summertime and the garden is producing like crazy! I’ve been snapping pictures and doing quick Instagram posts, but I just haven’t taken the time to write a blog. I’m pretty much half asleep by the time I sit down in the evening.
Here’s what’s been going on-
Zucchini, zucchini, zucchini- I’ve lost track of how much I have frozen. I believe I have 20 cups shredded and 5 gallon sized bags of cubed.
I have frozen 8 loaves of bread, pickled some, found a delicious recipe for lemon zucchini bread. It was amazing! Plus I gave away a bunch and what we have eaten along the way in recipes. Note to self: Don’t plant so much next year.
Next came carrots! I had been pulling a few here and there, but last weekend it was time to pull all of them. Here is the pile after they had been washed and peeled. I froze three gallon size bags – one cut in rounds and two cut in sticks.
The cucumber vines have been producing as well. I now have three batches of 14 Day Pickles going. I’ll be canning the first batch Monday evening, followed by batch #2 next Friday. The third batch just got started yesterday. I have post it notes on each tub so I can keep track of what day they are on and what needs to happen.
The hubs bought a couple of old sickle bar mowers and has rebuilt one. He’s having a good time out cutting the grass in the ditch and trimming up after the folks came and baled our hay. We want to bale our own one day, but we still need to find a reasonably priced square baler.
And the beans are starting to come on. I picked this bowl full this morning along with a sweet cherry pepper. I’ll be busy freezing beans in the near future.
All of this is hard work, but I love every minute of it. Among all the work, I do take time to stop and enjoy the beauty.
